Fruit and nut oat cookies

If you’ve visited Church House Westminster or attended a conference , meeting or training workshops, you’ll recognise these tasty cookies.

Not only are they healthy, offering sources of whole grain and good fats, but they are also absolutely delicious.

Our top tip for this recipe is to ensure you brew a large cup of tea to serve with these fruit and nut oat cookies.

 

MAKES 10

 

INGREDIENTS

  • 180g banana, mashed
  • 1 tsp vanilla essence
  • Pinch of cinnamon
  • 50ml oil
  • 50g honey
  • Half a lemon, zest & juice
  • Half a lime, zest & juice
  • Half a orange, zest & juice
  • 200g oats
  • 20g chia seeds
  • 50g mixed chopped nuts
  • 50g raisins
  • 75g dried apricots, chopped

 

METHOD

  • Mix banana with vanilla, cinnamon, oil and honey. 
  • Add oats, chia seeds, mixed nuts, dried fruits, citrus zest and 2 tsp of each fruit juice.
  • Mix together well with your hands, then form into 10 cookies.
  • Place on a lined baking tray and bake for 20-30 minutes, or until golden brown.
