    Basil Seed & Rose Essence Summer Cooler

    This month our Head Chef has shared his favourite refreshing drink recipe, perfect for a Summer party or BBQ.

    Ingredients:

    50g basil seeds

    50ml rose essence

    1500ml sparkling water

    ½ bunch mint leaves

    150g palm sugar

    3tsp lemon juice

    1packet blueberries

     

    Method:

    Soak the basil seeds and rose essence in 300 ml of water.

    Leave it for an hour or till it swells up and soaks all the water.

    Drain off the excess water if any.

    In a blender, add the palm sugar, lemon juice and mint, blitz it roughly.

    Add the sparkling water.

    Leave it for 15 minutes for the flavours to infuse.

    Strain and add the soaked basil seeds.

    Honey can be added instead of palm sugar.

    Garnish with blueberries and mint sprigs.
